Beef Wellington

Beef Wellington is a beef fillet coated in a mushroom paste, wrapped in prosciutto and puff pastry, then roasted until the crust turns deep golden and the centre stays pink. It is a centrepiece dish, built for a special occasion rather than a weeknight, and the timing has to be precise for every layer to work at once.

What it really is

Mushrooms cook down slowly with shallots and herbs until nearly all their moisture evaporates, concentrating into a dense, spreadable paste that coats the seared beef fillet in a thin, even layer. A sheet of prosciutto wraps around that coated fillet next, sealing in moisture and adding its own savoury edge before the whole thing wraps again in puff pastry and roasts just long enough for the pastry to turn deep golden while the beef inside stays pink and rare.

Every layer exists to protect the one moisture-sensitive centre. The mushroom paste, the prosciutto and the pastry each do a specific job keeping the beef from drying out or the pastry from turning soggy — skip a layer and the whole balance the dish depends on falls apart.

• Say how the beef is cooked, since Wellington is judged specifically on the centre staying pink, and guests may want it confirmed.
• Note that it needs advance timing, since a properly rested, correctly cooked Wellington isn't a fast order.
