In detail

Tortilla Española is a thick Spanish omelette of egg, potato and onion, served in wedges. Unlike a French omelette it is firm and cake-like, and it is one of the most common dishes in Spain — found in every bar as a tapa.

What it actually is

Potatoes and usually onion are gently cooked in olive oil until soft (not crisp), then folded into beaten egg and set in a pan. The tortilla is flipped to cook both sides into a thick, round cake with a just-set, slightly creamy centre.
