In detail

Pizza Margherita is the original Neapolitan pizza — tomato, mozzarella and basil on a thin base. Its red, white and green echo the Italian flag, and by tradition it was named in 1889 for Queen Margherita of Savoy.

What it actually is

A soft, thin wood-fired base is topped with tomato (classically San Marzano), mozzarella (buffalo mozzarella di bufala or cow's-milk fior di latte), a few leaves of fresh basil and a drizzle of olive oil. Authentic Pizza Napoletana is a protected specialty and bakes in under 90 seconds in a fierce oven, leaving a puffed, charred cornicione (crust).

  • Simply, without extra toppings — the point is the balance of three ingredients.
