Falscher Hase

Falscher Hase is a large oval loaf of minced meat, egg and breadcrumb baked until the crust browns deeply. It's German home cooking's meatloaf, and the name literally means "fake hare" — a callback to leaner times when a proper roast hare was too expensive, and a shaped loaf of ground meat stood in for it on the table instead.

What it actually is

A mix of minced beef and pork binds with egg, soaked breadcrumbs and chopped onion, seasoned simply and shaped by hand into a large, dense oval loaf — the shape is meant to loosely echo a hare's haunch, which is the whole joke behind the name. It bakes uncovered until the outside browns into a firm, deeply coloured crust while the inside stays moist, and often a boiled egg is pressed into the centre before shaping, so each slice reveals a ring of egg yolk when cut.

The oval, hare-like shape is part of the tradition, not incidental. A version baked in a straight loaf tin loses the visual joke the name is built on, even though the filling and flavour are otherwise identical.

How it's served

• Sliced, hot or cold, with the boiled-egg centre visible if one was used.
• With potato and gravy, or a simple salad, as a classic weeknight dinner.
• Cold, in sandwiches, as a common way to use leftovers the next day.

Writing it on a menu

• Flag gluten and egg; the breadcrumb binder and egg carry both.
• Say if a boiled egg is baked into the centre, since a guest cutting into a slice might otherwise be surprised.
• Note that it's served hot or cold, since both are traditional depending on the meal.
• Mention the cured-salt content if nitrite curing salt is used in the mix, per local labelling rules.
