Leberkäse

Leberkäse is a dense loaf of finely ground pork, beef and back fat baked until the crust browns, sliced thick and pan-fried to order. It's Bavaria's butcher-counter classic, and despite the name — which translates to "liver cheese" — the traditional recipe contains neither liver nor cheese.

What it actually is

Pork, beef and pork fat are ground extremely fine and emulsified into a smooth, dense paste, seasoned with onion, marjoram and a touch of nutmeg, then packed into a loaf pan and baked slowly until the surface turns deep golden brown and slightly crisp while the inside stays pale and firm. Once baked and cooled, thick slices are cut and pan-fried to order, re-crisping the surface for each portion rather than reheating the whole loaf.

The texture sits somewhere between a sausage and a pâté — smooth enough to slice cleanly, dense enough to hold its shape in a bread roll without falling apart.

How it's served

• A thick slice, pan-fried, on a small plate or in a crusty roll ("Leberkäswecken").
• With sweet or hot mustard, spread or served on the side.
• With a fried egg and potato salad, when ordered as a full plate rather than a quick snack.

Writing it on a menu

• Clarify that it contains neither liver nor cheese, since the name misleads guests who don't know the dish.
• Say whether you serve it in a roll or as a plated main, since the two are different orders in a guest's mind.
• Note that it's pan-fried to order, not simply reheated; the crisp surface is part of what makes a good slice.
• Mention if a fried egg or mustard comes standard, since both are common defaults worth naming upfront.
