Sunday Roast

Sunday roast is roasted beef carved thick, served with Yorkshire pudding, roast potatoes and gravy. It is the meal British families still build a whole afternoon around, slow enough to demand the day and substantial enough to justify it.

What it really is

Beef roasts slowly in the oven until it reaches the doneness the household prefers, resting afterward so the juices settle before it's carved into thick slices rather than thin ones. Potatoes roast in the same oven, usually parboiled first so the outside turns properly crisp while the inside stays soft, and a Yorkshire pudding — a simple batter of egg, flour and milk — puffs up hollow and golden in a hot tray, traditionally baked in the fat left behind by the meat. Gravy, made from the roasting juices themselves, ties the whole plate together rather than arriving as an afterthought.

The gravy has to come from the roast, not a jar. A Sunday roast made with the actual pan drippings tastes recognisably different from one finished with a shortcut gravy; the depth those juices carry is a real, tasteable part of what the meal is meant to be.
