Faloodeh

Faloodeh is frozen, thin rice-starch noodles in a tart rose water and lime syrup. Persian iced desserts have a documented history stretching back many centuries, long before mechanical refrigeration existed, making faloodeh one of the older frozen desserts still regularly eaten today, well predating ice cream as it's commonly understood.

What it really is

Very thin noodles made from rice starch cook briefly until just set, then chill and freeze into a loose, semi-solid mass rather than a smooth, churned ice cream — the noodles stay somewhat distinct within the frozen mixture rather than blending into a uniform texture. A syrup of sugar, rose water and lime juice, sharply tart and floral, pours over the frozen noodles just before serving, and the combination of icy, chewy noodle strands with the bright, perfumed syrup is the dessert's whole appeal.

The texture is meant to be genuinely icy and slightly chewy, not smooth like ice cream. Faloodeh predates the churning techniques that make ice cream smooth, and its coarser, more granular texture is a real, deliberate characteristic rather than a limitation — comparing it to ice cream and expecting the same mouthfeel misses what the dessert actually is.

How it's served

• Very cold, syrup poured over just before eating.
• Sometimes with a few drops of extra rose water or a scoop of saffron ice cream alongside.
• As a dessert, especially refreshing in hot weather.
