Alheira

Alheira is a smoked sausage of bread and poultry rather than pork, pan-fried and split open at the table. It was born from a disguise Jewish communities in Trás-os-Montes once needed to survive the Inquisition, made to look like an ordinary pork sausage from the outside while containing none.

What it really is

Bread soaked in a garlicky, paprika-spiced broth binds together with poultry — traditionally chicken or game rather than pork — into a paste that's stuffed into a casing and smoked, taking on the same appearance and smoky aroma as the region's pork sausages without sharing their content. Pan-fried whole and split open at the table, the inside reveals a soft, bready texture entirely unlike the firmer, meatier bite of an ordinary sausage.

The bread is not a filler here, it's structural. Alheira carries far more bread than a typical sausage would, which is exactly what let it pass convincingly as pork sausage centuries ago — the recipe was designed from the start to look right from the outside while being something else entirely inside.
