What it really is

Puleleti is a coconut confection associated with Tuvalu and other low-lying Polynesian atolls. It is made by combining dried or grated coconut with a sweet syrup made from coconut toddy, then shaping the mixture into small pieces. Puleleti is made with coconut and is traditionally dried for storage.

Puleleti is a preserved sweet rather than a baked cake. Coconut flesh is grated and dried, then worked with coconut syrup until the mixture binds. Small portions are shaped into balls and left to dry or firm. A recipe based on fresh coconut toddy syrup may produce a chewy, glossy sweet; a drier preparation keeps longer. Sugar syrup may be used where toddy syrup is unavailable, but that is a substitution and should be identified as such.

Puleleti is shared with Tokelau, rather than exclusive to Tuvalu. It is distinct from fresh coconut pudding because the grated coconut is bound into small, firm portions rather than served as a spoonable custard.
