alioli

Alioli is a garlic-and-oil emulsion from the western Mediterranean, closely associated with Catalan and Valencian cooking. Traditional versions are made from garlic, olive oil and salt alone; many restaurant versions use egg or mayonnaise for a more stable emulsion.
